Country Hash
Country Hash is an moderately easy dinner. Made with 4 large potatoes, 2 c. cut up meat (like for chop suey), 1 medium green pepper, cut up, 1 tsp. salt and 1/4 c. oleo, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Peel and dice potatoes (1/2-inch pieces).
Cut in small amount of water for 5 minutes.
Drain.
Combine with leftover cut up meat and salt in buttered 2-quart baking dish.
Melt butter in saucepan. Stir in flour.
Gradually add milk, stirring constantly over low heat until mixture thickens.
Pour over ingredients in baking dish. Put in 350Β° oven, covered, for 45 minutes.
Makes 6 servings.
