Corn Muffins
Corn Muffins is an moderately easy dinner. Made with 1 c. all-purpose flour, 3/4 c. yellow corn meal, 3 tbsp. sugar, 4 tsp. baking powder and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Preheat oven to 425°.
Grease 12 (2 1/2-inch) muffin pan cups; set aside.
In medium bowl, combine dry ingredients; mix well. Using pastry blender, cut in shortening until mixture resembles fine crumbs.
Combine milk and eggs.
Add to dry ingredients, all at once, stirring just until moistened.
Don't overmix.
Spoon into cups 3/4 full.
Bake at 425° for 20 to 25 minutes. Immediately remove from pan.
Serve warm.
