Corn Muffins
Corn Muffins is an moderately easy dinner. Made with 1 1/4 c. white or yellow corn meal, 1 c. unsifted flour, 1/4 c. granulated sugar, 1/4 c. firmly packed light brown sugar and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Grease 12-cup muffin tin.
In a medium bowl, use a fork to stir in together corn meal, flour, both sugars, baking soda and salt.
In a small bowl, beat egg slightly with buttermilk and corn oil.
Join both mixtures and stir until moistened.
Spoon into prepared muffin tins.
Bake in a 425Β° oven for 20 minutes or until golden.
Remove from pan and cool before serving.
