Corn Chili
Corn Chili is an moderately easy dinner. Made with 2 tbsp. vegetable oil, 1 onion, minced, 3 cloves garlic, minced, 1 1/2 tbsp. chili powder and 1/8 to 1/4 tsp. cayenne pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large heavy saucepan heat oil over moderate heat.
Add onion and garlic.
Stir to coat, then simmer until onion is softened. Add chili powder, cayenne and cumin.
Stir to blend.
Cook for at least 3 minutes, stirring frequently.
Add celery, peppers and tomatoes.
Simmer 5 minutes.
Add beans and corn.
Simmer 20 minutes.
Season with salt.
Serves 4.
