Corn Casserole
Corn Casserole is an moderately easy dinner. Made with 2 c. cooked rice, 2 cans creamed corn, 1 large bell pepper, chopped, 1 large onion, chopped and 1 stick butter, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onions, bell pepper, jalapeño pepper and pimento in butter.
Mix cooked rice and corn to the sauteed mix.
Add sugar, salt and pepper.
Place in a buttered dish.
Cook for 20 minutes at 300°.
Grate cheese on top the last 5 minutes or until melted. (Can be frozen.
Leave cheese off until ready to cook.)
