Confetti Scalloped Potatoes
Confetti Scalloped Potatoes is an moderately easy dinner. Made with 1/2 c. margarine, 1/2 c. chopped onion, 1 can cream of mushroom soup, 1 c. (4 oz.) shredded cheddar cheese and 1 small green pepper, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a skillet, saute the onion in margarine. Stir in potatoes, soup and milk.
Add cheese, green pepper, pimento, salt, pepper and half of the cracker crumbs.
Pour into casserole and top with remaining crumbs.
Bake at 375Β° for 40 minutes. Serves 6 to 8.
