Confetti Rice
Confetti Rice is an moderately easy dinner. Made with 1/2 c. butter, 1 c. celery, finely chopped, 1 c. onion, finely chopped, 1 bell pepper, finely chopped and 3 (10 3/4 oz.) cans chicken broth, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 350Β°.
Melt butter.
Saute celery, onion and bell pepper for 5 minutes.
Do not brown.
Pour broth into 2-quart baking dish; add rice and stir for 3 minutes.
Add sauteed vegetables and cover dish.
Bake for 45 minutes and remove from oven.
Toss rice with parsley.
