Collard Greens With Tomatoes, Onion And Garlic is an moderately easy dinner. Start the bacon frying in a large pot.
Fry for about 5 minutes, add water and turn up the flame.
Bring to a boil, then lower the flame.
Simmer for about 1 1/2 hours, until the liquid has been reduced to about 3 cups.
Add the greens to the pot. Cover and simmer for 15 minutes.
Remove the cover and simmer for 30 minutes.
Heat oil in a cast-iron skillet.
Add onions and garlic; saute for 10 minutes or until onions wilt.
Add the tomatoes, red pepper flakes, salt and pepper.
Mix and simmer 10 to 15 minutes.
