Coconut-Spice Cake
Coconut-Spice Cake is an impressive dinner. Made with 1 c. vegetable oil, 1 c. firmly packed light brown sugar, 1 c. sugar, 2 eggs and 2 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine first three ingredients; beat well.
Add eggs, one at a time, beating well after each addition.
Combine flour and next four ingredients.
Add to creamed mixture alternately with buttermilk, beginning and ending with the flour mixture.
Stir in vanilla, coconut and chopped pecans.
Pour batter into two greased and floured 9-inch round cake pans.
Bake at 350Β° for about 25 minutes.
Cool cake layers in pans 10 minutes.
Remove layers from pans and cool on wire racks.
Spread with Cream Cheese Frosting.
