Coconut-Pineapple Pie
Coconut-Pineapple Pie is an moderately easy dinner. Made with unbaked 9 or 10-inch pie shell, 1/2 stick butter or margarine, softened, 1 3/4 c. sugar, 1 tbsp. corn meal and 4 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Prepare pie.
Mix softened butter, sugar and corn meal.
Add eggs, one at a time, mixing well after each addition.
Add pineapple and coconut and mix well.
Spoon mixture into unbaked pie crust.
Bake at 450° for 10 minutes.
Reduce heat to 325° and bake 30 to 40 minutes until center is firm.
