Coconut Pineapple Cake
Coconut Pineapple Cake is an moderately easy dinner. Made with 1 (8 oz.) can crushed pineapple and juice, 1/2 c. coconut, 2 c. flour, 1 c. sugar and 1/2 c. brown sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Drain pineapple, reserving juice and add enough water to make 1 cup.
Grease and flour a 13 x 9 x 2-inch pan.
Add pineapple, coconut and juice to the other ingredients.
Beat on low speed for 1 minute.
Scrape bowl and beat two more minutes.
Pour in pan and bake in 350Β° oven for 45 to 50 minutes.
Frost with vanilla frosting and sprinkle with 1/2 cup nuts.
