Coconut Pecan Frosting
Coconut Pecan Frosting is an moderately easy dinner. Made with 1 c. evaporated milk, 3 egg yolks, slightly beaten, 1 1/2 c. coconut, 1 c. confectioners sugar, sifted and 1 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In saucepan, combine milk, sugar, egg yolks and butter. Cook, stirring over medium heat, until thick, about 15 minutes. Add coconut, pecans, confectioners sugar and vanilla. Stir until desired consistency.
Cool. Makes enough for one 13 x 9 cake.
