Coconut Marshmallows
Coconut Marshmallows is an moderately easy dinner. Made with 1 envelope unflavored gelatin, 1/3 c. cold water, 1/2 c. sugar, 2/3 c. white karo and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Toast the coconut until it is light brown.
Soften the gelatin in cold water in the top of a double boiler.
Place over boiling water and stir unti the gelatin is dissolved.
Add sugar and stir until it is dissolved.
Remove it from heat.
Pour the syrup into a large bowl and add the vanilla and gelatin mixture.
Beat on highest speed with a mixer until marshmallow consistency, about 15 minutes.
Grease a 7 x 10 x 1 1/2-inch pan.
Put coconut in the bottom of the pan.
Pour the marshmallow over it and cool.
Cut into squares and roll in coconut until all sides are covered.
