Coconut Cream Pies
Coconut Cream Pies is an moderately easy dinner. Made with 1/2 c. sugar, 1/3 c. flour, 1/2 tsp. salt, 3 c. milk and 3 egg yolks, beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine 1/2 cup sugar, flour and salt in saucepan.
Add milk and egg yolks; mix well.
Cook over medium heat until thickened, stirring constantly.
Remove from heat.
Stir in 1 cup coconut and vanilla.
Spoon into pie shells.
Beat egg whites in mixer bowl until soft peaks form.
Add remaining 6 tablespoons sugar, 2 tablespoons at a time, beating until stiff peaks form.
Spread over fillings, sealing to edges.
Sprinkle pies with remaining 1/2 cup coconut.
Bake at 350Β° for 15 minutes or until lightly browned.
