Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 2 c. milk, scalded, 1/3 c. flour, 2/3 c. sugar, 3 eggs, separated and lump of butter, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix together flour and 2/3 cup sugar.
Add to scalded milk. Cook over medium heat until thickened.
Beat egg yolks and add small amount of thickened mixture.
Mix and return to pan.
Cook 2 or 3 minutes more.
Add butter and 1/2 cup coconut.
While this is cooking, beat egg whites with cream of tartar until stiff.
Add 2 tablespoons sugar at a time until 6 tablespoons have been added.
