Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 3/4 c. sugar, 1/3 c. all-purpose flour (or 3 tbsp. cornstarch is better), 1/4 tsp. salt, 2 c. milk and 3 slightly beaten egg yolks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In saucepan, combine sugar, flour and salt; gradually stir in milk.
Cook and stir over medium heat until mixture boils and thickens.
Cook 2 minutes longer.
Remove from heat.
Stir small amount of hot mixture into yolks; return to hot mixture and cook 2 minutes, stirring constantly.
Remove from heat; add butter, coconut and vanilla.
Cool to room temperature.
Pour into baked pastry shell.
