Coconut Cream Pie
Coconut Cream Pie is an moderately easy dinner. Made with 2 2/3 c. milk, 1 1/4 c. sugar, 4 tbsp. cornstarch, 3 tbsp. flour and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift together sugar, cornstarch, flour and salt.
Scald milk in double boiler.
Add dry ingredients.
When mixture begins to thicken, add 1/2 cup to egg yolks, then pour back into mixture. Stir very often, cooking until thick.
Remove from heat.
Add butter, vanilla and coconut; stir until butter melts.
Pour into pie shell.
Spread meringue on hot filling, sealing to edge of crust.
Bake in 350Β° oven until light golden brown.
Cool on wire rack.
