Coconut Cheese Pie
Coconut Cheese Pie is an moderately easy dinner. Made with 1 1/2 tbsp. butter, softened, 2 2/3 c. coconut, 4 eggs, 2/3 c. sugar and 1 (8 oz.) pkg. cream cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Spread butter evenly over bottom and sides of 9-inch pie pan. Press 1 1/3 cups coconut into butter, forming a shell.
Mix 1 cup coconut, the eggs, sugar, cheese and lemon juice.
Blend until smooth, about 1 1/2 minutes.
Pour into coconut shell.
Sprinkle remaining coconut in a ring around top and in center.
Bake at 325Β° for 30 minutes.
Refrigerate any leftovers.
