Coconut Cake with Frosting
Coconut Cake With Frosting is an impressive dinner. Made with 1 c. sugar, 1 c. cooking oil, 3 eggs, separated, 1 c. buttermilk and 1/2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix 1 cup sugar, oil and egg yolks; mix well. Stir in 1 teaspoon vanilla and buttermilk. Sift flour, soda and salt; add to sugar mixture and mix well.
Pour into greased (spray is okay) 9 x 13 baking pan or dish. Bake at 350Β° for 20 to 30 minutes or until golden brown and springs back in center. Remove and cool while making frosting.
