Coconut Cake
Coconut Cake is an moderately easy dinner. Made with 1 c. margarine, soft, 2 c. sugar, 4 eggs, 3 c. sifted cake flour and 1 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream butter; gradually add sugar, beating well.
Add eggs, one at a time, beating well after each.
Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.
Mix after each addition. Stir in flavorings.
Pour into 3 greased and floured 9-inch round cake pans.
Bake at 350Β° for 25 to 30 minutes.
Cool in pan 10 minutes.
Remove from pans and cool completely.
Frost with White Mountain Frosting.
Sprinkle coconut between layers, top and sides of cake.
