Coconut Battered Shrimp
Coconut Battered Shrimp is an moderately easy dinner. Made with 4 c. sweetened shredded coconut, 2 tsp. ground cumin, 3/4 tsp. ground coriander, 1/2 tsp. cayenne pepper and salt and pepper, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Bake coconut in a 325° oven until brown (about 10 minutes; stir several times and watch carefully).
Coarsely grind coconut. Mix spices in a large bowl with eggs; coat shrimp.
Dredge in coconut.
Transfer to greased baking sheets and refrigerate 1 hour to 1 day.
Bake in a 400° oven for about 12 minutes.
Serve with Mango Chutney Sauce.
