Clete's Fettuccine Alfredo
Clete'S Fettuccine Alfredo is an impressive dinner. Made with 16 oz. egg noodles, 2 tbsp. butter, 1 small onion, thinly sliced, 4 c. whipped (heavy) cream and 2 tbsp. freshly grated parmesan cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat butter in 10-inch skillet over medium-high heat.
Saute onion in butter. Stir in whipping cream; heat to boiling. Stir in 2 tablespoons cheese, 1 teaspoon nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper; reduce heat.
Simmer, uncovered, for 30 minutes, stirring frequently.
Heat water and 1 tablespoon salt to boiling in large kettle; add fettuccine noodles. Boil, uncovered, until tender, but firm. Drain fettuccine. Mix fettuccine and sauce; top with 2 tablespoons cheese and 1 teaspoon nutmeg.
Serve with pepper. Makes 4 servings.
