Clam Stuffed Eggplant
Clam Stuffed Eggplant is an impressive dinner you can prepare in about 1 hour 42 minutes. Made with medium eggplants, c. finely chopped celery, c. finely chopped onion, garlic, crushed and oil, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cut eggplants in half lengthwise.
Place cut side down in shallow baking dish.
Add 1/4 cup water.
Bake at 350° for 30 minutes.
Scoop out eggplant; leave 1/2-inch shell.
Chop eggplant; saute with celery, onion and garlic in 1/4 cup oil about 10 minutes.
Add rest of ingredients.
Spoon into shells.
Brush outside rims and top with oil.
Bake at 350° for 30 minutes.
