Chunky Cheese Spaghetti
Chunky Cheese Spaghetti is an moderately easy dinner. Made with 4 boneless chicken breast halves, sliced into 2 inch strips, 2 tbsp. olive oil, 3 medium zucchini, cut in half lengthwise then into 1/2 inch slices, 1 green pepper coarsely chopped and 1 red pepper, coarsely chopped, this recipe delivers authentic, satisfying flavors. Cook chicken in skillet until no longer pink.
Remove chicken from pan; drain all but 1 tablespoon oil.
Add zucchini, peppers, mushrooms, onion and garlic to skillet.
Cook and stir over medium-high heat until crisp-tender.
Add chicken and spaghetti sauce.
Cook until thoroughly heated.
Add the cheese.
Cook and stir just until cheese melts.
Pour sauce over cooked spaghetti. Sprinkle with parsley.
