Chuck Wagon Stew
Chuck Wagon Stew is an impressive dinner. Made with 1 tsp. sugar, 2 lb. lean beef, cut into 1-inch cubes, 1/4 tsp. pepper, 1/4 tsp. ground thyme and 2 ripe tomatoes, peeled and chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine sugar and flour.
Coat beef with flour mixture. Brown in hot shortening.
Add seasonings, tomatoes and broth to meat. Cover and simmer 1 1/2 hours or until meat is almost tender.
Stir in vegetables, except and cook about 15 minutes more.
Cook 8 more minutes. Yield: 6 to 8 servings.
