Christmas Fruit Cake
Christmas Fruit Cake is an impressive dinner. Made with 3 1/3 c. sifted flour, 3 tsp. baking soda, 1 tsp. salt, 2 tsp. cinnamon and 1 tsp. nutmeg, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Grease and flour 2 Christmas tree cake pans.
Preheat oven to 350Β°.
Mix flour, soda, salt, cinnamon, nutmeg and cloves in large bowl.
Stir in eggs, reserve 1 white for icing, melted butter, sugar and applesauce; blend well.
Stir in dried fruit, raisins and walnuts, mix well.
Spread in prepared pans.
Pans will be almost full.
Bake for 45 minutes or until center springs back when lightly touched with fingertip.
Cool in pans on wire rack for 10 minutes.
Remove from pans, cool completely.
Layers may be wrapped and refrigerated a week before use.
May use Snow White Icing.
