Chow Chow
Chow Chow is an impressive dinner you can prepare in about 1 hour 34 minutes. Made with peck green tomatoes, chopped or ground, peck ripe tomatoes, chopped, onions, . brown sugar and . celery seed, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Chop all vegetables.
Combine green tomatoes, ripe tomatoes, onions, cabbage and peppers.
Sprinkle with salt and put in a coarse cotton bag.
Hang up bag and let drain overnight.
Squeeze the bag in the morning to remove any juice left.
Put vegetables in a porcelain kettle with brown sugar, horseradish, black pepper, mustard seed, celery seed and mace.
Cover with vinegar and boil until it turns clear.
Seal in jars.
(Taste to see if sweet enough.)
