Chop Suey
Chop Suey is an moderately easy dinner. Made with 6 lb. hamburger, 6 large onions, 4 tbsp. salt, 4 (no. 2) cans tomatoes and 6 c. celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven roaster to 500°. Brown beef in shortening in an enamel pan or the roaster.
Add remaining ingredients except celery.
Stir well and cover.
Set temperature to 400° and cook until all vegetables and rice are tender, about 45 minutes to 1 hour.
Add celery the last 20 minutes of cooking time.
Keep hot. Yields 50 people, 3/4 cup serving.
