Chocolate Zucchini Cake
Chocolate Zucchini Cake is an moderately easy dinner. Made with 4 eggs, 1 1/2 c. oil, 3 c. sugar, 3 c. grated zucchini and 2 (2 oz.) sq. unsweetened chocolate, melted, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Beat together until light in color the eggs, oil and sugar. Stir in zucchini and cooled, melted chocolate.
Mix well. Stir together the flour, salt, baking powder, soda and cinnamon. Set aside 1/4 cup. Add remaining flour to egg mixture, mixing just to blend. Toss nuts with the 1/4 cup flour and mix until blended well. Grease and flour a 9 x 13-inch pan. Bake at 350Β° for 1 hour or until done.
Make cream cheese icing.
