Chocolate Mint Soufflé

Combine 2 teaspoons sugar and flour in saucepan.
Gradually stir in milk, mixing well.
Stir in egg and egg yolk and cook over low heat until thickened, stirring constantly.
Cool.
Melt chocolate in crème de menthe.
Stir into egg mixture.
Fold in stiffly beaten egg whites.
Spoon into 4 (8 ounce) soufflé cups which have been lightly buttered and sprinkled with granulated sugar.
Bake in a pan of hot water at 350° for 20 minutes or until soufflé tests done (a silver knife inserted in center comes out clean when done).
Serve at once.
