Chiles Rellenos Casserole
Chiles Rellenos Casserole is an moderately easy dinner. Made with 3 (4 oz.) cans whole green chiles, 1 c. milk, 1/3 c. flour, 2 eggs, beaten with fork and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 375Β°.
Slit open green chiles; remove seeds. Rinse and lay flat on paper towels to dry.
In medium bowl, whisk milk and flour with beaten egg.
Season batter with salt.
Layer half of chiles in bottom of a greased 1 1/2-quart baking dish.
Top with half of cheese and pour on half of batter.
Repeat with remaining chiles, cheese and batter.
Place in middle of oven. Bake 30 minutes.
Spoon mashed tomatoes evenly over top.
Bake 30 minutes longer, or until set.
