Chicken With Vegetables, Chinese Style is an moderately easy dinner. Made with 3 large chicken half breasts, boned, skinned and cut in 2 1/2 x 1/2-inch strips, 1 tsp. powdered ginger, 1/4 tsp. paprika, 3/4 tsp. salt and 2 tbsp. oil, this recipe delivers authentic, satisfying flavors. Toss the first 4 ingredients in oil and saute for 5 minutes. Push chicken to one side of the pan and add the celery, pepper and onion.
Stir and fry for 5 minutes and then add tomato, wine and soy sauce.
Heat to simmering.
Turn heat low, cover and cook for 5 minutes.
Then blend cornstarch and water and stir into chicken mixture.
Stir constantly until sauce bubbles.
Serve at once over crisp bean sprouts, rice or noodles.
