Chicken with Capers
Chicken With Capers is an moderately easy dinner. Made with 6 chicken cutlets, skinless, flattened, 8 tbsp. flour, paprika, salt and pepper to taste, 2 1/2 tbsp. butter and 1/2 c. olive oil or to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a shallow bowl, combine flour, paprika, salt and pepper. Dip cutlets in flour mixture.
Saute chicken in butter and olive oil on medium-high heat until golden brown.
Remove cutlets. Discard oil mixture.
Add lemon juice and capers.
Return cutlets to pan.
Saute over low heat for about 5 minutes.
Serve over rice.
Makes 6 servings.
