Chicken Rice 'n Easy
Chicken Rice 'N Easy is an moderately easy dinner. Made with 1/3 c. dry white wine, 3/4 c. chicken stock or water, 1/2 tsp. salt, 1 1/2 c. quick cooking rice and 1 1/2 to 2 chicken breasts, split, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 400Β°.
In a 7 x 11 x 2-inch greased glass baking pan, combine wine, stock or water, salt and rice.
Place chicken breasts over rice mixture.
Combine mushrooms with soup. Spread over chicken.
Sprinkle with thyme, bread crumbs and butter.
Cover tightly with foil and bake about 1 hour or until chicken is done.
