Chicken Ratatouille

Heat oil.
Saute chicken, onion and carrots until brown.
Add diced green pepper, eggplant and squash.
Cook about 5 minutes, then add seasoning and tomatoes.
Cover and cook about 15 minutes, stirring occasionally.
Uncover and cook 15 minutes more to absorb liquid.
Sprinkle on lemon juice.
Serve hot or cold.
Good over rice or noodles.
