Chicken Mexicali
Chicken Mexicali is an moderately easy dinner. Made with 1 (3 lb.) chicken, 1 (6 1/4 oz.) pkg. tortilla chips, 1 can cream of mushroom soup, 1 can cream of chicken soup and 1 c. chicken broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook chicken; remove skin and bone.
Preheat oven to 350Β°. Arrange tortilla chips on bottom and sides of a 13 x 9 x 2-inch oblong baking dish.
Cover tortilla chips with broken pieces of chicken.
Combine liquid ingredients.
Add onion and bell pepper. Pour over chicken.
Top with grated cheese.
Bake, uncovered, for 1 hour.
Makes 6 to 8 servings.
