Chicken Fiesta
Chicken Fiesta is an moderately easy dinner. Made with 2 1/2 to 3 lb. chicken pieces, salt, pepper, paprika and 2 tbsp. butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Season chicken with salt, pepper and paprika.
Brown in melted butter in a large skillet over medium heat.
Drain chicken on paper towels; set aside.
Cook sausage, celery and onions in same skillet over medium-high heat until vegetables are tender, stirring frequently.
Add rice, corn and lemon juice; mix well.
Pour into buttered shallow baking dish.
Arrange chicken on top of rice mixture, pushing slightly into rice mixture.
Cover with foil. Bake at 350Β° for 30 to 40 minutes or until chicken is tender. Makes 6 servings.
