Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 1 hen or large fryer, boil, bone and cut into cubes, 1 lb. grated sharp cheddar cheese, 18 tortillas, 1 onion and 1 can ro-tel tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Grease large casserole or 2 small ones.
Put chicken, cheese and onion in each tortilla and fold over.
Place in casserole. Blend Ro-Tel tomatoes, cream of mushroom soup, cream of chicken soup and chicken broth.
Pour over casserole and bake 45 minutes at 400Β°.
Serves 6 to 8.
