Chicken Dijon
Chicken Dijon is an moderately easy dinner. Made with 8 chicken breast halves, salt and pepper, 1 c. flour, 8 tbsp. butter, divided and 1/4 c. chicken broth, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sprinkle chicken breasts with salt and pepper and roll in flour.
Melt 4 tablespoons butter in skillet.
Brown chicken and remove to roaster.
Add broth to pan juices.
Scrape bits from sides and bottom.
Pour over chicken.
Saute onion, parsley and mushrooms in remaining 4 tablespoons butter.
Pour mixture over chicken.
Cover and bake for 1 hour at 350Β°.
Remove chicken to serving plate.
Stir mustard and sour cream into liquid in roaster.
Heat and pour over chicken or serve on the side.
