Chicken Chasseur
Chicken Chasseur is an moderately easy dinner. Made with 1 lb. boneless chicken breasts, cut in strips, 1/3 c. cornstarch, 1/4 c. oil, 1/2 tsp. each tarragon and thyme and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Dredge chicken in cornstarch.
In large skillet, brown coated chicken in oil.
Stir in seasonings and scallions.
Cook 2 minutes.
Add broth and wine.
Cover and simmer 10 minutes. Gently stir in mushrooms and tomatoes.
Cover; simmer 5 minutes longer.
Serve over rice.
