Chicken Casserole
Chicken Casserole is an moderately easy dinner. Made with 6 to 8 chicken breasts or 10 thighs, 8 oz. sour cream, 2 tbsp. poppy seed, 1 can cream of chicken soup and 1 stack (from box of 3) ritz crackers (i use 1 pkg. keebler crackers instead), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook chicken in salted water.
Remove skin and bones.
Cut up chicken in bite size pieces and place in a large casserole dish (13 x 9 x 2-inch Pyrex pan).
Mix sour cream and soup together and pour over chicken.
Crush crackers and mix with poppy seed. Sprinkle over chicken.
Melt oleo and pour over top.
Bake at 350Β° for 30 to 40 minutes.
Serves 8 to 10 people.
