Chicken Carolina
Chicken Carolina is an moderately easy dinner. Made with 3 lb. fryer chicken, cut up, 1 tsp. salt, 1/4 c. shortening, 1 c. onion, chopped and 1 1/3 c. catsup, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Coat chicken with mixture of flour, salt and pepper.
Melt shortening in large deep skillet.
Brown chicken pieces, then remove from skillet.
Saute green pepper, onion and garlic until tender.
Stir in catsup and remaining ingredients.
Return chicken to skillet.
Cover and simmer (basting occasionally) for 45 to 60 minutes or until chicken is tender.
Serve with hot fluffy rice, if desired.
Makes 6 servings, about 3 cups of sauce.
