Chicken Broccoli
Chicken Broccoli is an moderately easy dinner. Made with 1 lb. chicken (boneless breasts), 2 c. broccoli flowerets, 1 medium red pepper, 1 tbsp. vegetable oil and 1 (8 oz.) can water chestnuts, sliced, this recipe delivers authentic, satisfying flavors. Cut the chicken breasts into strips.
Cut the pepper into thin strips.
Heat the oil in a large skillet.
Add chicken; cook and stir until it is thoroughly browned.
Add the broccoli, red pepper and water chestnuts.
Cook and stir until tender-crisp.
Mix in broth, soy sauce, cornstarch, garlic powder and ginger into the mixture.
Bring to a boil; let it boil for 1 1/4 minutes.
Prepare the rice as directed on the package, omitting the margarine and salt.
Pour mixture over rice and serve.
