Chicken Breasts Parmesan
Chicken Breasts Parmesan is an moderately easy dinner. Made with 6 chicken breasts, deboned and skinned, 1/4 c. olive oil, 1 c. seasoned bread crumbs, 1/2 c. parmesan cheese and 2 tbsp. parsley, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat olive oil in heavy skillet.
Dredge chicken breasts in a mixture of bread crumbs, all but 3 tablespoons Parmesan cheese and parsley.
Coat with beaten egg and redredge in crumbs.
Cook over medium heat until golden brown on both sides.
Cover with tight-fitting lid and simmer on low heat for 15 to 20 minutes.
Drain on paper toweling.
