Chicken and Wild Rice
Chicken And Wild Rice is an moderately easy dinner. Made with 3 to 4 large skinned chicken breasts, 1/2 c. water, 1/2 c. dry sherry, 1 1/2 tsp. salt and 1/2 tsp. curry powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place chicken in deep kettle.
Add water, sherry, salt and curry powder and onion.
Bring to a boil, cover tightly and reduce heat.
Simmer 1 hour.
Remove from heat.
Strain broth. Refrigerate chicken and broth.
When chicken is cool, remove meat from bone.
Cut into bite-size pieces.
Clean and saute mushrooms until golden brown.
Measure chicken broth.
Use broth as liquid for cooking rice.
