Chicken and Brown Rice
Chicken And Brown Rice is an moderately easy dinner. Made with 4 chicken breasts (skinless), 1 green pepper, chopped, 1 can beef consomme, 1 c. rice and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash chicken; pat dry.
Saute rice in frying pan in 2 tablespoons of butter just until brown, along with the pepper and onion.
Place in baking dish.
Add consomme; mix.
Place chicken breasts on top.
Cover with can of golden mushroom soup. Bake, covered, at 350° to 400° for approximately 1 hour, until chicken is done and rice is tender.
