Chicken Almond Rice
Chicken Almond Rice is an moderately easy dinner. Made with 6 chicken breasts, skinned, 3 oz. can sliced mushrooms, salt and pepper, paprika and juice of 1/2 lemon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place chicken in baking dish and sprinkle with salt, pepper and paprika.
Brown almonds in margarine and remove from pan after browning.
Add onions and mushrooms to remaining margarine and saute.
When slightly browned, add herbs, lemon juice and sherry. Return almonds to onion mixture and stir together.
Spoon over chicken.
Cover with foil and bake 1 hour at 350Β°.
Cook rice according to package directions.
Lift cooked chicken out of sauce.
Gently stir cooked rice into sauce to serve.
Spoon rice mixture on platter.
Place chicken on top of rice and garnish with parsley.
Serves 6.
