Cherry Pecan Cake
Cherry Pecan Cake is an moderately easy dinner. Made with 1/2 c. finely chopped pecans, 8 oz. softened cream cheese, 1 c. softened butter or oleo, 1 1/2 c. sugar and 1 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 325Β°.
Grease a 10-inch tube or Bundt pan. Sprinkle with 1/2 cup finely chopped pecans.
In a large mixing bowl, beat the cheese, butter, sugar, vanilla, cinnamon and nutmeg until fluffy. Add eggs, one at a time, beating well. Combine flour and baking powder. Add to batter and mix well. Stir in the cherries and coarsely chopped pecans.
Pour into prepared pan. Bake 1 hour and 15 minutes or until a wooden toothpick inserted near center comes out clean.
Cool for 5 minutes and remove from pan.
Garnish and frost as desired.
Makes one 10-inch cake.
