Cherry and Whipped Cream Salad
Cherry And Whipped Cream Salad is an moderately easy dinner. Made with 2 packets knox unflavored gelatin, 1/2 c. cold water, 20 oz. can crushed pineapple, drained, 3/4 c. sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Soften gelatin in cold water.
Drain pineapple (set aside). Add enough water to pineapple juice to make 1 1/2 cups.
Heat this (pineapple juice and water) almost to boil; add gradually to gelatin.
Stir until dissolved.
Stir in sugar, lemon juice, salt and vanilla.
Pour into mixing bowl.
Chill until slightly thick. Beat with mixer until light and fluffy.
Fold in drained pineapple, cherries and whipped whipping cream.
Refrigerate.
Best when made day prior to serving.
(Pretty for Christmas using mixture of red and green maraschino cherries).
Use cherry slices on top.
