Cheesy Mexicali Quiche
Cheesy Mexicali Quiche is an moderately easy dinner. Made with 1 3/4 c. shredded cheese, 3 tbsp. all-purpose flour, 1 c. chunky salsa, 1 c. evaporated milk and 1 c. diced yellow or zucchini squash, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 375Β°.
In a small bowl, toss together 1 1/2 cups cheese, squash and flour.
Place in pie shell.
Spoon 1/2 cup salsa over top.
In medium bowl, whisk eggs and evaporated milk. Pour into pie shell.
Sprinkle with remaining cheese.
Bake for 50 to 55 minutes.
Cool 15 minutes before serving.
